Canestrato Pugliese D.O.P.
 
The “Canestrato Pugliese” , acknowledged as D.O.P.
(Protected Denomination of Origin) in 1996, is a kind of cheese
whose pasta is tough and not burned; it is made from whole sheep’s
milk of gentle Apulia breed which genealogically originate from
the merinos race. Its name derives from the typical rush baskets
of Apulia where the canestrato matures. The “Canestrato
Pugliese” is produced since December to may, the typical
period of transhumance of the flocks coming from the Abruzzi (a
region of middle-south of Italy) up to the flats of Tavoliere
Pugliese. The handwork of this cheese is long and very varying,
according to the dimensions of the moulds that weigh between 7
and 14 kilos.
