di Latte is the most famous fresh Apulia cheese in the world.
The mozzarella is a fresh cheese with a stringy pasta made from
the pasteurization of milk with the addition of cheese-rennet
and salt. The product obtained in such a way ( the so called curd)
is left in hot water for a while, pilled in threads and salted.
It is characterized for its innumerable variations. Its weight
is between 50 and 300 grams or it has the mould as a pear, the
so called “campagnola” tied with a string. Manufactures
are in small baskets with a specific weight that varies from 0,680
, 0,800 , 1,2 , and 3 kilos.
