It
is a fresh and appetizing cheese with a sweet taste of good milk
just milked. The “Pecorino Dolceprato” is made only
from ovine milk moulded in characteristic baskets which give it
a traditional aspect. It has a straw-coloured and soft pasta and
its weight is not over 2 kilos.This tyoical cheese has always
been appreciated in the South of Apulia.
