is a fresh ,creamy and soft mixed ricotta (kind of cottage cheese),
typical pugliese “campesina”. It is entirely made
to hand from whey of milk and the addition of ovine milk and salt.
It is manufactured in a small basket and with modern technologies;
it has an easy conservation that guarantees the inalterability
of its organoleptic characteristics. Manufactures of the variable
weight between 0,500 and 1,900 grams. .
